Yellow Lentils served with Wild Rice

Ingredients:

1 cup yellow lentils

3 cups water

1 tablespoon curry powder

1 tsp turmeric powder

1 tablespoon olive oil

1 tsp whole cumin seeds

I chopped medium sized tomato

1 chopped medium sized onion

1/2 cup tomato puree

1 tablespoon lemon juice

2 tsps iodized salt

2 tablespoons finely chopped cilantro

Preparation: Cook 2 cups wild rice the same as any rice.

For the lentils: Boil all ingredients together for about 20 minutes, except for salt and coriander leaves; when done, add the latter ingredients, and serve over hot wild rice. Healthy and delicious!

Wild rice has a good flavour but with the yellow lentils it tastes better! A good recipe.
